Coffee is largely cultivated by poverty-stricken smallholder farmers. These farmers only control the harvesting, meaning that they are not able to profit from the possible differentiation of their product.  Farmers are forced to live in poverty, unable to re-invest in their land and often use environmentally degrading farming techniques, due to a lack of alternative options.
